Bukhari Rice / Bukhari Polau is easy to make, simple, and delicious. Bukhari rice is a Saudi Arabian speciality but also cooked in the UAE, and Pakistan. It comes in many different colours (including red, white and mixed colour) and shapes; it can be cooked many different ways. I tried to give easy one considering Bangladeshi people taste buds. Usually paprika (non-spicy chilli which gives only colour) is used for this recipe. But I used our traditional chilli powder (which you can use more or less up to your taste).
1 kg chicken curry cut ( you can take less amount chicken)
3 cups of Aromatic rice(Basmati preferable)
3 tbsp tomato paste
2 tsp garlic paste
1 and 1/2 cups onion sliced
½ tsp black pepper powder
1 tsp chilli powder
1 tsp coriander powder
1 tsp lemon juice
2 “cinnamon stick
2 cardamom pods
1 tsp sugar
2/3 cup carrot ( cut it into julienne cut /matchstick shapes)
1/2 cup raisin(kismis)
1/3 cup cashew nuts / almonds
¾ cup oil
How to make:
Wash and soak the rice for about 30 minutes. Drain water and place into a strainer.
Soak Raisin for 10 minutes in water.
Clean, wash and pat dry chicken pieces; marinate chicken with 1 tsp garlic, 1 tsp salt and lemon juice for at least half an hour.
Heat the oil in a pot and fry raisin, nuts and sliced carrots one by one. When you are frying carrots, add ½ tsp sugar.
In same oil fry onion until translucent; add the whole spices (cinnamon, cardamom and cloves).
Add marinated chicken pieces. Stir and allow the chicken to fry for a few minutes until the chicken looks slightly golden. Sprinkle rest of spices (coriander, chilli, garlic and black pepper powders), tomato paste and salt.
Cook for another couple of minutes then add the water. Bring to a boil and cook till chicken is cooked and oil comes up.
Now add rice and 4 and ½ cups hot water in it.
Cook it 10 minutes in high heat under closed lid and check salt ; add sugar2/3 amounts carrot, nuts and raisin;
Give a stir and cook 10 minutes on low heat under closed lid.
Serve Bukhari rice / Polau garnishing with toasted nuts, carrots and raisin
